1 Case/ 90 Unbaked Chocolate Croissants
Place frozen chocolate croissants on a lightly greased or parchment paper-lined baking sheet. Let them rise uncovered and at room temperature (68ºF-72ºF) for approximately 7-9 hours, or overnight. You will notice that they have grown much bigger. Preheat oven to 375ºF. [Optional: for a glossier finish, make an egg wash by lightly beating 1 egg with 1 tablespoon cold water. Before placing them in the oven, lightly brush them with egg wash]. Conventional Oven – At Home Use: Bake chocolate croissants at 350ºF for about 15-22 minutes until golden brown. Industrial Rotating Oven – For Commercial Use: Bake chocolate croissants at 375ºF for about 15-20 minutes until golden brown.
